BAKE ME: Easy Apple Galette

A couple weekends ago I hiked up to Boston for a ladies weekend. BMF, THE LB and I went apple picking to celebrate fall and pumpkin spice lattes. It really is one of my favorite autumnal activities. It was a gorgeous day and we picked so many apples (and some pears!).
I wasn’t sure what to make with all of the apples. I had never made a galette before and I was feeling a bit fancy. It was so easy and came out beautifully! I adapted a recipe from Food & Wine. You could probably make this with any fruit. Next, I am going to try it with pears!
Ingredients:

Dough
1-1/2 cup all purpose flour
1-1/2 teaspoons white sugar
1/4 teaspoon sea salt
1 stick of cold, unsalted margarine, cut into small pieces
1/3 cup cold water

Filling
3-4 apples
2 tablespoons white sugar
2 teaspoons cinnamon
1 teaspoon honey (or agave nectar)
1 tablespoon cold, unsalted margarine, cut into small pieces

Directions:
1. In a food processor, combine the flour with the sugar, salt and butter and process for about five to ten seconds. Sprinkle the ice water over the flour mixture and process until the dough starts to come together. Wrap the dough in plastic wrap and place in the refrigerator to chill for one (1) hour.
2. About twenty (20) minutes before the dough alarm, preheat the oven to 400 degrees and start peeling, coring and slicing the apples.
3. On a lightly floured counter, roll out the pastry and transfer to a parchment paper covered baking sheet. Spread the chopped apples over the pastry to within one (1) inch of the edge. Drizzle honey or agave over the apples. Arrange the apples on top of the dough in circles or in overlapping rows. Sprinkle the cinnamon sugar over the apples and dot with the pieces of margarine. Fold the pastry edge up and over the apples to create a border.
4. Bake the galette for about one (1) hour, until the pastry is nicely browned and crisp and all of the apples are tender. Transfer the pan to a rack and let the galette cool. Serve warm or at room temperature.
