BAKE ME: Whole Wheat Coconut Flour Banana Chocolate Chip Muffins

WHO IS EXCITED FOR FRIDAY?! It is only 4 days away!

Friday aka jeans day is my favorite day of the week.  Everyone who knows me, knows that wearing jeans to work makes me giddy. Who wouldn’t want to wear denim to their office. In honor of jeans day I try to bring in a tasty snack to the office once a month. This month it was some new banana chocolate chip muffins. I was at Trader Joe’s doing my grocery shopping and I saw coconut flour. I decided to try it.  The results were delicious. Hope you enjoy these as much as my co-workers did!

Ingredients:
1/2 cup margarine melted/softened (1 stick)
1 cup whole wheat flour

1/2 cup Trader Joe’s coconut flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2-3 large ripe (or “dying”) bananas, mashed

1/2 cup granulated white sugar
1/4 cup brown sugar
2 large eggs
1/2 cup semisweet chocolate chips
1 teaspoon vanilla extract
Directions:
1.    Heat oven to 350 degrees.  
2.    Spray muffin tins with Pam.
3.    Whisk flour, baking powder, salt and baking powder in a small bowl.
4.    In a large mixing bowl, mix together butter and sugars till creamy.
5.    Slowly add eggs, vanilla, mashed banana.
6.    Add the flour mixture and mix until just combined (do not over mix).
7.  Add the semisweet chocolate chips last. Fold them into the batter.
7.    Fill the muffin tins with the batter, each about 2/3 full.
8.    Bake for 18-22 minutes, or until a toothpick comes out clean.
9.    Cool in pan for 10 minutes, then transfer to wire rack to cool.
