BAKE ME: Thanksgiving Pumpkin Bread Muffins

HAPPY THANKSGIVING: PUMPKIN BREAD MUFFINS

Thanksgiving is one of my FAVORITE holidays. It is a time to relax, eat, enjoy and spend with your family. What is not to like?

We always spend Thanksgiving in Los Angeles with my extended family. It is such a special time and we truly enjoy it! There is a lot of tradition embedded in my family Thanksgiving.  One of my favorite Thanksgiving traditions is waking up early on Thanksgiving day to help my mother prepare the turkey, stuffing, pumpkin pie, banana chocolate chip muffins and of course her famous pumpkin bread muffins! We spend HOURS in the kitchen starting at about 6:30AM. I usually wake up even earlier because I cannot contain my excitement for the day!

Another one of my favorite traditions is “assisting” my mother with the turkey carving. The reason assisting is in quotations is because I don’t actually do any carving. I stand there picking off pieces of turkey to get an early taste! I also stand there so I have a prime opportunity to grab the wishbone!

Ingredients:

Flour, 3-1/2 cups

Baking Soda, 2 teaspoons

Sea Salt, 1-1/2 teaspoons

Cinnamon, 2 teaspoons

Nutmeg, 2 teaspoons

White Sugar, 3 cups

Eggs, 4

Libby’s Pumpkin Puree, 2 cups

Water, 1/2 cup

Vanilla Extract, 1 tablespoon

Vegetable Oil, 1 cup

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Spray muffin tins with Pam.
  3. Combine the dry ingredients into a large bowl.
  4. In a smaller bowl combine the wet ingredients.
  5. Slowly add the wet ingredients into the larger bowl and combine. Be careful not to over mix the batter.
  6. Pour the batter into the muffin tins, until each muffin is about 2/3 full.
  7. Bake for twenty minutes or until a toothpick inserted comes out clean.

**The muffins taste even better if you chill them in the refrigerator overnight!
